

Bacon and Egg Galettes

Directions
- Preheat oven to 390º.
- Finely dice onion and chop bacon slices into small pieces.
- In heated frying pan, add olive oil and fry onion and bacon pieces until golden brown. Stir often.
- Line cooking tray with baking paper and cut cooled pastry into 5 inch by 5 inch squares.
- Distribute bacon and onion mixture on top of pastry squares.
- Make an indent in the center of the pastry and leave a small border around the edges.
- Fold up sides of pastry, pressing edges firmly. Brush with egg wash.
- Add egg into center indent of the pastry.
- Bake in preheated oven for approx. 10 minutes until golden brown.
