Directions

  1. Cook the Bacon: In a large skillet or Dutch oven, cook the diced bacon over medium heat until the fat is rendered, and the bacon is crispy, about 15-20 minutes. Remove the bacon with a slotted spoon and set aside. Leave about 2 tablespoons of bacon fat in the skillet.
  2. Cook the Onions and Garlic: Add the finely chopped Sweet Imperial Onions (or yellow onions) to the skillet with the bacon fat. Cook over medium heat, stirring occasionally, until the onions are caramelized, about 20-25 minutes. Add the minced garlic and cook for an additional 2-3 minutes.
  3. Combine Ingredients: Add the cooked bacon back into the skillet with the onions and garlic. Stir in the brewed coffee, Dijon mustard, apple cider vinegar, brown sugar, red pepper flakes, black pepper, cinnamon stick, and salt.
  4. Simmer: Bring the mixture to a simmer and reduce the heat to low. Cook, stirring occasionally, until the mixture thickens and has a jam-like consistency, about 30-45 minutes. If the mixture becomes too thick, add a small amount of water to achieve the desired consistency.
  5. Adjust Seasoning: Taste the bacon jam and adjust the seasoning if needed, adding more salt, pepper, or red pepper flakes to suit your preference. You can also add a bit of ground cinnamon if you want to enhance the sweetness.
  6. Cool and Store: Let the bacon jam cool slightly before transferring it to a jar or airtight container. Store in the refrigerator for up to 2 weeks.

  • 3 cloves garlic, minced
  • 1/2 cup strong brewed coffee
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1 cinnamon stick
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. freshly ground black pepper
  • Salt to taste
