

Bacon & Gruyere Tartlets

Directions
- Preheat oven to 350º.
- Cut bacon strips in half lengthwise and cook in large pan, stir often until crispy. Keep about 2 tsp of grease.
- Slice onions into ¼ inch rounds. Reduce heat to medium low on pan and add onions, sugar, and salt. Stir often until reduced.
- Add in balsamic vinegar, reduce heat to low, and continue to cook onions about 15 minutes until golden and softened.
- Remove from heat, stir in thyme, black pepper, and pre-cooked bacon. Allow ingredients to cool slightly and stir cream into onions until thoroughly combined.
- Place filling into pie crust and spread evenly throughout. Sprinkle grated gruyere on top and bake in oven approx. 15 minutes until filling is set.
- Garnish with thyme and enjoy!

- 1 ½ tbsp balsamic vinegar
- 2 tbsp fresh thyme, chopped
- ¼ tsp freshly ground pepper
- ¼ cup heavy cream
- 1 cup gruyere, grated
