  4. Wrap in Bacon: Wrap each chicken breast tightly with 2 slices of smoked pepper bacon, securing with toothpicks or kitchen twine.
  5. Smoke the Chicken: Place the bacon-wrapped chicken breasts on the smoker rack. Smoke for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C) and the bacon is crispy. For food safety, check the temperature earlier (around 45 minutes to 1 hour) and then monitor closely until the target temperature is reached.
