Directions

  1. Cook the Bacon: In a skillet over medium heat, cook the bacon until not quite done as it will be back in the oven for anther 10 minutes. Remove with a slotted spoon and drain on paper towels.
  2. Prepare the Flatbreads: Preheat the oven to 375°F (190°C). Place the flatbread pizza crusts on a baking sheet. Spread a layer of herbed cream cheese evenly over each flatbread.
  3. Add Toppings: Distribute the roasted red peppers evenly over the cream cheese layer. Place 4 half-slices of cooked bacon on each flatbread.
  4. Bake the Pizzas: Bake in the preheated oven for about 10 minutes, or until the flatbreads are heated through and the edges are slightly crispy.
  5. Cook the Eggs: While the pizzas are baking, heat a nonstick skillet over medium heat. Crack the eggs into the skillet and cook sunny-side up until the whites are set but the yolks are still runny.
  6. Assemble and Serve: Remove the flatbreads from the oven. Place one sunny-side-up egg in the center of each flatbread. Drizzle with hot honey, then season with salt and pepper to taste. Garnish with fresh herbs.
