Directions

  1. Preheat oven to 325º.
  2. Line a roasting pan with foil and place on middle rack.
  3. Place the spiral ham cut-side down on pan and cover with foil. Place in oven.
  4. In a small saucepan over medium heat, combine the following: Orange juice, Lime juice, Honey, Brown sugar, Chili powder, Crushed red pepper flakes, Garlic powder, Salt and pepper
  5. Bring mixture to a simmer and stir occasionally until thick (10 minutes). Sitr in orange zest and remove from heat.
  6. Bake ham for roughly 1 hour (10 minutes per pound).
  7. After 1 hour of cooking, uncover ham and brush with citrus chili glaze.
  8. Continue baking ham uncovered for 30-40 minutes. Baste every 10 minutes until glaze is caramelized and sticky.
  9. Let ham rest for 10 minutes before slicing.
  10. Garnish with fresh herbs and citrus slices.

  • ¾ cup orange juice
  • 1/3 cup lime juice
  • ½ cup honey
  • 1/3 cup brown sugar
  • 2 tbsp. Dijon Mustard
  • 2 tsp. chili powder
  • ½ tsp. crushed red pepper flakes
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • ½ tsp. black pepper
  • Zest of 1 orange
  • Fresh herbs & citrus slices for garnish
