Directions

  1. Make Sauce: In a small saucepan, combine soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, ginger, and garlic. Simmer 3–4 minutes. Stir in cornstarch slurry until thickened. Remove from heat.
  2. Cook Vegetables: Heat vegetable oil in a skillet over medium-high heat. Add broccoli, bell pepper, and carrot; stir-fry 4–5 minutes until tender-crisp.
  3. Add Ham & Pineapple: Stir in diced ham and pineapple chunks. Cook 2–3 minutes until warmed and lightly caramelized.
  4. Coat with Sauce: Pour teriyaki sauce over ham and veggies, tossing to coat evenly.
  5. Assemble Bowls: Spoon rice into bowls. Top with ham, pineapple, and veggie mixture. Garnish with green onions and sesame seeds.
