- Make Sauce: In a small saucepan, combine soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, ginger, and garlic. Simmer 3–4 minutes. Stir in cornstarch slurry until thickened. Remove from heat.
- Cook Vegetables: Heat vegetable oil in a skillet over medium-high heat. Add broccoli, bell pepper, and carrot; stir-fry 4–5 minutes until tender-crisp.
- Add Ham & Pineapple: Stir in diced ham and pineapple chunks. Cook 2–3 minutes until warmed and lightly caramelized.
- Coat with Sauce: Pour teriyaki sauce over ham and veggies, tossing to coat evenly.
- Assemble Bowls: Spoon rice into bowls. Top with ham, pineapple, and veggie mixture. Garnish with green onions and sesame seeds.

- ½ cup low-sodium soy sauce
- ¼ cup pineapple juice
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp sesame oil

- 2 cloves garlic, minced
- 1 tbsp cornstarch + 2 tbsp water (slurry)
